2007 Cabernet Sauvignon
A big red, this wine, a gold medal winner at the 2011 Ontario Wine Awards, is made from premium grapes grown in two vineyards in Niagara, aged for nearly two years in French oak barrels and has great aging potential for your cellar.
Concentrated notes of fig, cassis, mint, dried tea leaves, smoked cedar and dark chocolate. Big, ripe tannins with tight structure and long, flavourful finish.

2007 Cabernet Sauvignon
Winemaking Notes:
Destemmed without crushing followed by a short cold soak, after which the fermentation lasted one week. Total maceration time of five weeks, followed by gentle pressing into barrel to complete malo-lactic fermentation. After aging 18 months on the lees, the barrels that best demonstrated varietal character were selected through a series of blind tastings to make up the final blend for this wine. Bottled unfined and unfiltered.
